Victorinox Forschner 40017 Boning Knife, Curved, Semi-Stiff, Rosewood Handle. Perfectly suited for accurate cuts, the Victorinox 40017 boning knife is small and lightweight while still providing the high-quality performance you've come to expect from Victorinox. At only 6 inches long from tip to handle, the semi-stiff curved blade is small and narrow making it great for separating flesh from fish and working around the small bones of poultry. Stamped construction provides a thinner, lighter blade, and the carved rosewood handle is not only classy, but boasts an ergonomically sound design to help reduce wrist tension and keep you cutting right through those busy hours. Built to last and proven to perform, the Victorinox 40017 boning knife is an all around excellent addition to any cutlery set.
It has a rosewood handle, adding a touch of class to any culinary setting. As with all Victorinox knives, the handle is ergonomically designed to minimize wrist tension and provides a natural fit. Hand-washing of wooden handles is recommended.
The blade has an exceptionally keen, razor-sharp edge. The high carbon, stainless steel blade is hand finished by skilled craftsmen at Victorinox in Switzerland. A special tempering process is used to produce an edge that can be resharpened over and over again. Each Victorinox knife is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished.
